Banana Smoothie

Good For You Banana Smoothie
Makes 1 serving

1/2 C. unsweetened soy milk
1/4 C. light orange juice
1/2 medium banana, frozen
2 T. Splenda granulated sweetener ( or 3 packets)
3/4 C. crushed ice

Place all ingredients, except ice, in a blender.  Blend to mix.

Add crushed ice and blend on high until the ice is completely incorporated.

Broasted Potato Wedges

Broasted Potato Wedges

8 washed, unpeeled potatoes - cut into wedges
1/2 C. oil
2 T. Parmesan cheese
1 tsp. salt
1/2 tsp. paprika
1/4 tsp. pepper
Add in small chopped green pepper & onion 

Mix oil, and spices well.  Take the potato wedges and roll in the oil mixture and place in shallow baking pan, 9 x 13 in. pan.   Sprinkle cheese on top.  Bake at 375 degrees for 45 minutes.   Don't forget the green peppers and onions.  

*I've made this for family functions, and everyone loves it!*

Bright Day Banana Muffins

Bright Day Banana Muffins

1 C. flour                                                              
3/4 C. whole wheat flour
1/2 C. sugar
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1/2 C. mashed bananas
1/2 C. milk
1/3 C. oil
1 egg, slightly beaten

Heat oven to 400 degrees.  Grease bottoms only of 12 muffin cups or line with paper baking cups.   In large bowl, combine all dry ingredients; stir in remaining ingredients just until dry particles are moistened.  Fill prepared cups 1/3 full.
Bake for 18 to 22 minutes or until golden brown.
Immediately remove from pan.  
Makes 12 muffins.

Popovers

This recipe sounds delish!   I can't believe, I've never made these before... ;)

Popovers   Makes 8

preheat oven to 450 degrees

1 Tb. oil
1 C. flour
1 C. milk
2 eggs
1/4 tsp. salt
1 Tb. melted butter or oil

Put 1/4 tsp. oil in each section of a muffin pan and put the pan in the oven.
Sift the flour and measure 1 cup.  Place the milk, eggs, flour, salt, butter, or oil in a blender and blend until smooth.  Pour the mixture into the hot muffin tins filling each cup 1/2 full.
bake 30 minutes in 450 degree oven until puffed and golden.

If you feel tempted to fill pans too full, the mixture which spill over the top will bake on bottom of the oven...

Potato Soup

Potato Soup - serves 2

2 C. chicken broth
1 C. potatoes, peeled and cut into 1 inch pieces
1 C. onions, chopped
1/2 C. milk or cream
1 Tb. finely chopped parsley
Freshly ground black pepper
1 Tb. butter

Bring the chicken broth to boiling in small saucepan.  Add the potatoes and onions.  Cover and simmer for 20 minutes.  Break the potatoes into smaller pieces in the broth using a potato masher, or put the soup in a blender and puree' it for 1 minute if you like a smoother soup.  Return the pureed soup to the saucepan.  Add the parsley, black pepper and butter.

This soup may be made with chopped leeks instead of onions.  Wash the leeks carefully and chop about 2 inches of the green stems with the white bulbs of the leeks.  Pureed cold potato and leek soup is known as vichyssoise.
Add a little more milk or cream and an additional 1/2 teaspoon of salt if the soup is served cold.

Favorite Chili

Crock pot recipe :)

1/2 lb. dry pinto or kidney beans
2 - 1 lb. cans of tomatoes
2 lbs. coarsely ground chuck (browned)
2 med. onions, coarsely chopped
1 green pepper, coarsely chopped
2 cloves garlic, crushed
2 to 3 Tablespoons of chili powder
1-1/2 T. salt, 1 teaspoon pepper, 1 teaspoon cumin (optional)

Parboil dry beans until soft; drain well.  Put all ingredients in crock pot in order listed.
Stir once.  Cover and cook on low for 10 to 12 hours.  Or high for 5 to 6 hours.

*When using canned beans (2-1 lb cans), make sure to drain and rinse beans, making sure to completely drain off all liquid.

*This was always our favorite recipe to turn to in the Autumn and Winter months.. but alas, I can no longer have this kind of food.  Bah.*


Salisbury Steak

1-1/2 pound hamburger
1 egg
1/2 C. toasted bread crumbs
1/4 C. chopped onion
1 tsp. salt  and 1/4 tsp. pepper
1/4 C. beefy mushroom soup

Mix all ingredients together, make into 6 patties, brown those on both sides.
Pour over remaining beefy mushroom soup thinned with water, and simmer in skillet for 1/2 hour.


*When I've made this recipe I substitute hamburger meat for ground turkey meat, and substitute the mushroom soup for cream of chicken soup.*


Basic Rice - serves 2

You'll need:
white rice  (not instant)
water
salt & pepper

1/2 C. rice
1 C. water
1/2 tsp. salt  & pepper

Add in all ingredients, set your temp to boil.   Boil rice uncovered, then cover and cook over low temp for 14 minutes.

Let stand 5 minutes, then fluff with fork.   Enjoy!

Swiss Steak

Swiss Steak

1 round steak

Set electric skillet at 375 degrees.   Pound steak, salt and pepper it, then add flour on both sides.

Have skillet hot and oil will be hot, to brown steak, after browning steak on both sides,  pour off excess oil.

pour on a little water.   Let boil then simmer steak, for 1 hour.


This Swiss Steak recipe is very simple to do and turns out delish!
